Hand-Shaped Pasta Techniques

Gnocchi Making Techniques

1. Prepare the Potato Base

Boil russet potatoes until tender, then peel while hot. Rice the potatoes through a fine mesh sieve or potato ricer while still warm. This creates the light, fluffy texture essential for perfect gnocchi.

2. Mix the Dough

Add flour gradually to the riced potatoes, starting with about 1 cup per 2 pounds of potatoes. Mix gently with your hands until the dough just comes together. Avoid overworking the dough to prevent toughness.

3. Shape the Gnocchi

Roll the dough into ropes about 1 inch thick. Cut into 1-inch pieces, then roll each piece against the tines of a fork or gnocchi board to create ridges. The ridges help sauce cling to the pasta.

4. Cook and Test

Cook gnocchi in gently boiling salted water until they float to the surface (about 2-3 minutes). Test one piece to ensure it's cooked through but not mushy. Perfect gnocchi should be light and pillowy.

Garganelli Making Techniques

1. Prepare Fresh Pasta Sheets

Roll out fresh pasta dough to about 1mm thickness. Cut into squares of approximately 4cm x 4cm. Keep the squares covered with a damp cloth to prevent drying while you work.

2. Position the Square

Place a pasta square diagonally on your work surface. Lightly brush the edges with water to help with sealing. The diagonal positioning creates the characteristic tube shape.

3. Roll Around the Tool

Using a garganelli comb or the tines of a fork, roll the pasta square around the tool, starting from one corner. Apply gentle pressure to create the ridged texture on the outside.

4. Seal and Shape

Press the overlapping edges together to seal the tube. Gently slide the garganelli off the tool. The finished shape should be a small tube with ridges on the outside and a hollow center.
